Pecan Crusted Salmon

A favorite recipe of mine, hope you guys enjoy

What you need:
4 salmon filets
2 Tbs dijon mustard
3 Tbs maple syrup
½ cup crushed pecans
½ cup Italian-style breadcrumbs
2 Tbs melted butter
2 Tbs chopped parsley

How To:


Pre-heat oven at 400 and line a baking sheet with aluminum foil.
Mix together the mustard and the syrup, slader it on the salmon.
Mix the remaining ingredients on a bowl and pat onto salmon.
Bake for 15 mins.
Enjoy.
*Can use chicken if you wish to.

Spinach Croquettes

Just another recipe recently created, hope you guys try it and like it!

Ingredients:

2 cups of spinach, cleaned without stems
4 bacon strips
2 Tablespoons of all purpose flour
2 Tablespoons parmesan cheese
2 egg whites whipped
1/2 cup toasted sesame seeds
Vegetable oil

How to:

1.- Steam the spinach until it has wilted.
2.- Fry the bacon, drain grease and chop in small pieces.
3.- Mix the flour and the parmesan cheese. Add the bacon pieces to the wilted spinach and add the mix the flour and parmesan mix. Make small bundles of the mix.
4.- Sumerge the bundle in the egg whites and cover well. Roll in the sesame seeds.
5.- Heat oil in pan and fry for about 5 minutes. Remove from pan and drain grease. Serve with the sauce.

For the sauce:

3/4 cup of sour cream
1 tablespoon of chopped onion
4 oz. of cream cheese at room temp.
8 tablespoons of chopped walnuts.

How to:

1.- Blend all ingredients until smooth, set aside until the croquettes are ready to serve.

What you need

1 (13.5 oz) can of coconut milk
1 tbs vegetable oil (change for 1/2 tbs olive oil)
3 garlic cloves finely chopped
1/4 white onion chopped
1/2 teaspoon curry powder
2 1/2 cups tomato sauce
1/4 teaspoon cayenne pepper
3 seeded tomatos chopped
1 (15 oz) can chickpeas
2 cups roughly chopped spinach
3 cups of chopped chicken breast (can replace with tofu)
1/2 teaspoon salt


How you do it:

1.- Heat oil in a pan and add the garlic and onions until they are soft and slightly translucent. Coat chicken* with salt and pepper, add to pan. Let it cook for 5 minutes.

2.- Add the tomato sauce, curry, coconut milk and chickpeas to pan. Let cook for 10 minutes stirring constantly.

3.- Add tomatos and spinach. Cook for another 5-7 minutes.

Enjoy!

*Or tofu.

Ely's Chickpeas

This is a side dish that goes well with chicken or on top of lettuce. It's a personal favorite of mine, since it's great for when you want to munch on something and you don't feel like cooking.

What you need:

2 (15oz.) can chickpeas
1/4 cup lemon juice
2 garlic cloves
1/4 cup parmesan cheese
5 tbs olive oil
1/4 cup chopped parsley
1/4 teaspoon black pepper.


How you do it:

In a blender, mix the lemon juice, garlic, oil and pepper. Blend.
Add the mix to the chickpeas, add the parmesan and parsley. Mix well. Enjoy.

Of Entanglement

The subtle fragrance of of love

Of a vague passion

A tattooed lie jumps at me
from the silk thread where it lays
on a forgotten city. But I still love you.

The walk towards purity
leads to a castle of dreams,
in a river full of nostalgia
that is full of foam of hope.

The silver sky shines brights
as the blue breeze waves
gently the trees of memories.

And suddenly you are close.
I surrounded to your memory
like a bullet through the night,
but full of light. And you smile.

Your smile is full fairy tales,
with a strange look
you break us. And you disappear.

Dreams

I wonder off in search of a dream,
I walk barefooted instead of taking flight,
running with the wind,
with the wild winds of the day
and the dark blue velvet of the night
I sleep in clouds of songs and dreams.
In search of a dream I find your face,
and I was almost happy for a while,
my ship had found a dock to land in
and the wind on my back was cool
as the sun shine on your hair
and I dreamed  of your lips upon mine,
but with the harshness of time
I was bound to wake up.

Fried mozzarella sandwich

A sandwich that I love, and I really mean it, it's very tasty.

What you need:


1 whole egg + 1 egg white
¼ teaspoon dijon mustard
1/8 teaspoon cayenne pepper
1 teaspoon fresh thyme chopped
Fresh  mozzarella cheese
A pinch of salt
4 slices of bread
4 tablespoons butter (or 2 Olive oil)


How you do it:


Drain the mozzarella and cut into small pieces. Set in paper tower to drain excess moisture.
In a bowl mix all but the last 3 ingredients together beat well.
Heat a pan and melt the butter (or wait for the oil to be hot).
Make the sandwiches and dip them on the egg mixture on both sides. Fry for about 2 min per side.
Drain excess oil, let it cool for a bit.
Enjoy.

Veggie Dip

A very good dip for those days when you just want to snack on crudité or in a piece of bread.


What do you need:

1 8oz bar cream cheese softened
1 tablespoon of chopped chives
2 tablespoons of mayonnaise
1 1/2 teaspoon dijon mustard
1/2 teaspoon worcestershire sauce
1/4 teaspoon salt
1/8 teaspoon pepper
1-2 tablespoon milk.

How to:

In a mixing bowl, combine cream cheese, mayonnaise, mustard, sauce, salt and pepper. Add milk until dip achieves desired consistency.

Secret

[145 words]

"It's not like I can die twice!"

The words left her mouth before she even realized what she had said. It was only when silence greeted her, that reality hit her. She looked around to find shocked faces, wide eyes and mouth agape.

What had she done?

She had done what she swore never to do, reveal that she in fact, had died.

It was her brother who broke the silence. "So, you did die in that fire, didn't you?". His voice was soft, unbelieving. Almost like a whisper.

She sighed and looked at him. "I did. I died... please don't ask me about it. This is not the time. But yes, I died."

Saying it out loud was cathartic. For once the secret that she had kept -and only Jocelyn knew- was out in the open.

She only wished it was under different circumstances.
